Who doesn’t love avocados? Avocados are so yummy, and I like to use it in a lot of different ways. One of the best ways to make it, in my opinion, is to make guacamole. Chips and dip is a classic go-to snack, and guacamole can’t be beat.

This recipe is great to make when you have an avocado in the fridge that is ripe and a bag of tortilla chips in the pantry. It’s super easy to make and doesn’t take too long. First, you just need to dice the avocado and use a fork to make it as smooth or chunky as you like. You can also adjust the spiciness (cayenne pepper, or swap for jalapeño peppers) depending on how much heat you can handle. To blend the red onion and garlic, I just start by roughly chopping them into smaller pieces. I use the Cuisiniart® Smart Stick® Two Speed Hand Blender with Whisk & Chopper Attachment. It’s a super handy appliance to have in the kitchen. It has a few different functions, but is really great for blending a smaller amount of ingredients, like the red onions and garlic for this guacamole.

When serving this dip, I typically serve it with the Tostitos Hint of Lime Tortilla Chips or Trader Joe’s Organic White Corn Tortilla Chips. But Cambrooke Therapuetic also has their Sea Salt Tortilla chips, or their Sweet Chili Tortilla chips that would go great with some guacamole dip. But if you want to cut back on the phe or the carbs, guacamole also goes great with veggies! I also use this guacamole in my Vegetarian Taco Salad recipe, which you should definitely go check out! I did make a quicker version of this by using powdered seasonings (for the garlic and onion flavors) and also just didn’t add the tomatoes, but it’s still delicious. I didn’t add this guacamole to my Veggie Wrap recipe, but it can definitely be put into this wrap if you like yours to have guacamole, or want to swap the sour cream for guacamole.

Ingredients:

1 avocado

1 tsp. lime juice

3 cloves of garlic

¼ cup tomato (approx. half a vine tomato)

¼  cup red onion

¼ tsp. salt

¼ tsp. pepper

¼ tsp. cilantro

¼ tsp. cayenne powder (optional)

Servings per Recipe: 2 servings

Serving Size: ¼ cup of guacamole

Phe per serving:  46mg

Directions:

  1. Cut open avocado, and cut into diced sized pieces.

  2. Put avocado into a small bowl, then mash it with a fork until desired consistency. Mash the avocado longer for smoother consistency.

  3. Remove seeds from tomato, and finely chop the tomato.

  4. Peel and dice the garlic, then dice the red onion. Using a hand blender, or other blending machine, add the garlic and onion and blend until they are finely chopped. 

  5. Add the tomato, red onions, and garlic to the avocado and blend together.

  6. Add lime juice and seasonings, then mix together with a fork until blended well.

  7. Place in the fridge for at least 30 minutes. After at least 30 minutes it should be ready to go.

  8. Serve and enjoy!
