Sweet Peach Yogurt Bowl

Tired of just boring old yogurt? Me too. When I first saw So Delicious yogurts, I was so excited. Not only is it a great low-protein alternative for yogurt, but it tastes good too. I thought I’d try spicing it up and adding some fruit and some other flavors to it.

Growing up, my mom would sometimes eat cottage cheese and peaches for breakfast. But why not yogurt and peaches? For this yogurt bowl, I added peaches and granola (to give it some crunch). I can tolerate the granola because I am on Kuvan. If the granola is too much phe for you, try using a low-protein cereal instead to retain that crunch for this yogurt bowl or you could also crumble graham crackers on top instead. I also added cinnamon, honey, and vanilla because I think those flavors pair really well with peaches. If you want a truly vegan dish, switch the honey for some agave nectar or maple syrup.

Ingredients:

1 cup So Delicious Vanilla Flavored Yogurt (225g)

½ cup canned peaches (111g)

½ tsp. ground cinnamon

¼ cup Udi’s gluten free granola

1 tsp. honey (agave nectar for vegan option)

¼  tsp. vanilla extract

Servings per recipe: 2

Serving size: ¾ cup (approx 180g)

Phe per serving: 102.5 (with granola)

Directions:

  1. First, weigh and add the So Delicious to a bowl.

  2. Then add the peaches and granola.

  3. Last, add the cinnamon, honey, and vanilla extract.

  4. Mix all the ingredients together.

  5. Serve and enjoy!
