Due to my new living arrangements, I needed to come up with a simple recipe that wouldn’t involve me taking over my aunt’s kitchen. (If you haven’t read my Life Update 2020, check it out here). I figured I would try to make a quick snack recipe that I could share with you.

This snack is great on a hot day, so perfect for summer. These low-protein frozen yogurt covered grapes are so easy to make and are super refreshing. But warning, they will cause brain-freeze so beware. I used grapes for this recipe, but it can easily be swapped out for any other small fruit, like raspberries, blueberries, blackberries, etc. 

For these yogurt covered grapes, I used green grapes only because I prefer the green ones to the purple ones (anyone else with me on that?). I used So Delicious Dairy Free Strawberry Banana coconut milk yogurt to cover these grapes. I meant to get the vanilla flavored, but when I was at the store my brain just kept telling me to get the strawberry banana flavor. But again, that’s an easy swap to make based on preference. You could easily use any of their yogurt flavors to cover your fruit. I bought a 5.3 oz container of yogurt, but I did not use the whole thing while covering my grapes. 

In order to make these, I used a toothpick to hold the grape and then dip it into the yogurt to cover it. Be generous when coating the grapes. I made sure they were completely coated and tried to make the yogurt smooth on the grape so it didn’t freeze bumpy, but that’s more of an aesthetic thing, not a taste thing. Once the grape is covered in yogurt, have a flat plate or a baking sheet lined with parchment paper ready to set them on. The first time I made these, I just put them into a Tupperware® container, but when they froze, they all stuck together. They tasted fine, but just didn’t look the way they were supposed to. If you are going to make a larger batch, definitely opt for using a baking sheet. When you lay them out on the plate or baking sheet, make sure they don’t roll around and touch before you put them into the freezer. 

I left these in the freezer for about 3 hours and they were completely frozen, however these can easily be made the night before and freeze overnight. One thing to keep in mind though, is once you take them out they need to be eaten rather quickly. If left out for too long, the yogurt will start to melt, but beware of brain-freeze!

 1 cup grapes (200g)

100g So Delicious Strawberry Banana Yogurt

*will also need toothpicks

Servings per recipe: 4

Serving size: 9 grapes

Phe per serving: 14 mg

Directions:

  1. Using a toothpick, cover each grape in the yogurt.

  2. Lay in even rows on a flat plate a small baking sheet. Make sure the grapes do not touch each other.

  3. Place in the freezer for at least 3 hours. You can prepare in advance and freeze them overnight.

  4. Remove from the freezer and serve immediately (yogurt will melt if left out too long).
