Creamy Spinach

This is a recipe I would occasionally have as a kid. I really liked making this because it made the spinach creamy. As a kid, I felt like I never got to eat creamy foods because they were always creamy due to the cheese in the dish. When I was growing up, the low-protein cheeses available to me never melted very well, so I didn’t have a whole lot of experience eating foods with melted cheese in them. 

The wheat starch, milk substitute, and butter is what makes this spinach creamy. It doesn’t look the creamiest, but it is pretty creamy, especially for someone who doesn’t usually eat cheesy, creamy foods. As for the milk substitute, I used oat milk but when I was younger I know I used Coffee Mate®  in the recipe. Because Coffee Mate®  has a lower phe count than oatmilk, that is what I used to calculate the phe for this recipe, please adjust your phe count when using a different milk substitute. Both milk alternatives worked fine for me, but I can’t guarantee the same outcome with another alternative like almond milk. But if you try it with almond milk, let me know in the comments if it turned out okay for you.

When making this recipe, it’s best to add the wheat starch slowly and mix it in. This helps you from adding too much wheat starch. However, if you add too much wheat starch, just add a little more milk and stir until you achieve a creamy, smooth consistency. This goes the opposite way as well, if you need to add more wheat starch because it is too watery, add a little bit at a time until you get the right consistency. 

I think this recipe is great to have as a side dish at dinner. A lot of the time, I’ll just make it and eat it as my lunch with nothing else (weird I know, but it is what it is). I definitely think some people might enjoy this as a spread on some crackers as well.

Ingredients:

10 oz frozen box of spinach

½ cup Coffee Mate® (or milk substitute of choice)

2 tbsp. Ajinomoto Wheat Starch 20g)   

2 tbsp. butter 

1 tsp. lemon juice   

½ tsp. garlic

¼ tsp. salt

¼ tsp. pepper

Servings size: ¼ cup 

Servings per recipe: 6 servings

Phe per recipe: 100mg 


Directions:

  1. Thaw the spinach according to package directions.

  2. Melt butter in a medium sized saucepan.

  3. Add spinach and milk substitute together. Stir.

  4. Add in the wheat starch and mix well. 

  5. Add lemon juice, garlic, salt and pepper. Stir frequently and cook until moisture is absorbed. Let it sit for two minutes. 

  6. Serve hot and enjoy!
