Sweet Potato Tacos with Lime & Cilantro Sauce

Happy Taco Tuesday! 🌮🥳 Who doesn’t love a good taco? I used to do really basic tacos with just lettuce, tomato, guac, and some low-pro cheese. They really weren’t that great, but I enjoyed them when I wanted some tacos. However, I have now upgraded my taco game and these are delicious!

The lime and cilantro sauce really takes the flavor to the next level. It’s a great easy combination of lime, cilantro, and garlic. You can also add a jalapeño or some cayenne powder to it if you want to spice it up. It’s so great that they’re are more low-protein dairy alternatives. Definitely check out the So Delicious brand if you haven’t heard of it before. They have some great products!

Having the cooked sweet potatoes adds that warmth to a taco that makes it so delicious. I’ve also made this with cooked cauliflower as well, so also easy to adjust your vegetable filling based on your veggie preferences.

Ingredients:

Sweet Potato Tacos with Lime & Cilantro Sauce

Tacos:

3 soft corn shell tacos

½ cup Sweet potatoes (70g)   

½ cup lettuce or coleslaw 

½ cup of Guacamole 

5 tbsp lime cilantro sauce (separated)

¼ tsp Garlic powder

⅛ tsp Cayenne

¼ tsp Paprika

¼ tsp Cumin

¼ tsp Salt 

¼ tsp pepper

2 tbsp olive oil (separated)


Lime & Cilantro Sauce:

1 cup of plain So Delicious Yogurt 

¼ cup cilantro

1 lime 

2 cloves of garlic

Directions:

For Lime & Cilantro Sauce:

  1. Add Yogurt into a blender. 

  2. Chop cilantro and garlic, then add to blender.

  3. Zest the outside of the lime and squeeze the lime juice into the blender

  4. Blend on medium pulse until the sauce is blended well. It should be light green in color.

For Tacos:

  1. Preheat oven to 400 degrees Fahrenheit. 

  2. Peel and dice sweet potato. Add it to a small mixing bowl and top with 1 tablespoon of olive oil and seasonings -- garlic powder, cayenne, paprika, cumin, salt, and pepper. Let it sit while preparing other ingredients.

  3. See Guacamole recipe to make fresh guacamole. 

  4. Put the lettuce or coleslaw into another small mixing bowl and add 2 tablespoons of the Lime & Cilantro Sauce. Mix together.

  5. Heat a small frying pan with the other tablespoon of olive oil. Once hot, add the sweet potatoes to cook. Reduce to medium heat, and cook for 8-10 minutes. Stir frequently to prevent burning. 

  6. About a minute or two before the potatoes are done cooking, put taco shells on a baking sheet and put them in the oven. They only need to go into the oven for 2-3 minutes. DO NOT cook longer in the oven or else they will harden. If you have a warm function on your oven, that may be a better choice.

  7. Take taco shells out of the oven and place into taco holders. Evenly distribute the sauce covered lettuce into the taco shells, followed by the guacamole. Then evenly add the sweet potatoes to each taco and top with 1 tablespoon of the lime & cilantro sauce for each taco.
