Eggplant Pizza

Eggplant is one of those super versatile vegetables. When it comes to substituting non-friendly PKU ingredients, I tend to think of using mushrooms, but eggplant is another one of those veggies that makes a great swap. Eggplant is an especially great swap for a pizza crust!

If you or your PKUer is going to a party or event where they are having bagel bites, or any other pizza bites, this is a great alternative. These eggplant pizzas are pretty small and are a great option when others have bagel bites, Totino’s pizza rolls, or anything similar.

When I made these, I was shocked at how tasty they were. I knew they would be good, but I surprised myself at how yummy they were. Not only are they super delicious, but they’re also very easy to make. It’s also probably easier to make these than having to making pizza dough.

When making these, I use a baby (Italian) eggplant because it is smaller and I am only cooking for myself. If you have multiple kiddos with PKU or just want to make these for the entire family, feel free to use a regular sized eggplant. For the cheese, I used So Delicious Cheddar Jack shreds, but if that’s too much phe for you, swap it for Cambrooke shreds or another low-protein cheese alternative. I like So Delicious cheese because it melts really well, so if you use a different cheese brand be mindful of how well the cheese melts.

Ingredients:

1 baby eggplant

6 tbsp. tomato sauce (separated)

6 tbsp. So Delicious Cheddar Jack Shredded Cheese (separated)

1/8 tsp. salt

1/8 tsp. Italian seasoning

1/8 tsp. garlic salt

Servings per Recipe: 3

Serving size: two eggplant pizzas (2 slices of eggplant)

Phe per serving: 91mg

Directions:

  1. Preheat the oven to 400 degrees Fahrenheit

  2. Slice eggplant in ¼ inch slices

  3. Place eggplant on baking sheet, and put into the oven for 5 to 8 minutes.

  4. Take the eggplant out of the oven and flip them.

  5. Add 1 tablespoon of sauce, and 1 tablespoon of cheese on top of the eggplant. Top with seasonings.

  6. Place the eggplant back into the oven for another 5 to 10 minutes, or until cheese is melted.

  7. Serve and enjoy!
